Here’s another go-to snack recipe I love. It’s so easy and delicious.
- Sweet Potato
- Olive Oil
That’s it! You can also add pepper or chilli powder if it suits your fancy.
- Preheat oven 250ºF
- Cut sweet potato into thin slices (I like to cut them basically as thin as I can without cutting off my finger, but they can be any size)
- Lay on a baking sheet and sprinkle with olive oil & salt (or you can toss them in a bowl but I like to use as few dishes as possible – less clean up!)
- Put in the oven for 45-1 hour, then flip and bake another 45-1 hour
Voila. Delicious, sweet, healthy chips! Great on their own or with a garlic aioli dip.
NOTE: If you’d rather have fries than chips (or you’re too impatient to wait that long), bake on a higher temperature (we’re talking 425ºF) for a lot less time (10-15 minutes a side) – always check to make sure they don’t burn!
