Easy & Delicious Snack Recipe: Roasted Chickpeas

Roasted chickpeas are a great snack because they’re healthy and you can take them on the go with you. I often just make mine quickly with olive oil and salt! But you can spice them up a bit like this:
Ingredients:
- chickpeas
- olive oil
- salt
- paprika
- garlic powder
Directions:
- Preheat oven to 400ºF.
- Rinse chickpeas well & drain.
- Toss them on a baking sheet with olive oil, salt, paprika, & garlic powder (you can obviously do this in a bowl first, but that makes one more dish to clean ;))
- Bake for 15 minutes, toss, then bake another 10-15, watching to make sure they don’t burn!

I’ll munch on these bad boys at any time of day. They’re also a great substitute for croutons in salad!
Salad #1:
- roasted chickpeas
- green leaf lettuce
- cucumber
- avocado
- tomato
- olive oil
- lemon
- s&p
Toss everything together and voila! Healthy and delish. Or…
Salad #2:
- roasted chickpeas
- romaine lettuce
- green onion
- olive oil
- lemon
- tahini
- s&p
Mix tahini, lemon, & olive oil together in a small dish. Pour on top of lettuce & green onion. Season with salt & pepper and chickpeas, then toss. Delicious! This one’s my fave!
