Super Easy, Healthy Granola Recipe

Here’s a quick and easy recipe to add to your greek yogurt & berries, cereal, or eat on the go in a pinch.


  • 2.5 cups oats
  • 1/2 cup shredded coconut (unsweetened)
  • 1/4 cup nuts (I like almonds – you can chop them but don’t have to)
  • 1/4 cup pumpkin seeds (or sunflower, or both!)
  • 1/4 cup maple syrup (if you used sweetened coconut then cut back on the syrup)
  • 1/4 cup coconut oil
  • 1/2 Tbsp vanilla
  • 1/8 tsp salt
  • 1/8 tsp cinnamon

Other optional ingredients you can add:

  • almond butter
  • flax seeds


  1. Preheat oven to 315ºF
  2. Mix dry ingredients in a bowl
  3. Mix wet ingredients in a separate bowl
  4. Combine everything, mixing until dry ingredients are completely covered
  5. Spread granola evenly onto a baking sheet
  6. Bake for ~20 mins, mixing at least once throughout (NOTE: watch that it doesn’t burn!)
  7. Granola is finished when it’s a light golden brown colour. (NOTE: If you let it sit after taking it out of the oven it will cook a little bit more)
  8. Enjoy! Or store (once cooled) for several days.
